Fluffy, pumpkin mousse piled high on top of Chef Diane’s favorite gingersnap cookie crust (it’s just an added bonus that this pie is gluten-free). The Pumpkin Mousse Pie will be handed over to you ready for the center of the table with a good helping of vanilla whipped cream and toasted pumpkin seeds on top. This pie is best served chilled, so keep it refrigerated until you are ready to enjoy and then cut it with a hot, sharp knife. This pie will serve 6-8 guests.
